The Velvet Foot Mushroom (pictured here) is a unique brand only because of its endurance to cold weather. In fact, the Velvet Foot can be found from late September until the early weeks of March. It has a sticky brown cap with beautiful golden gills. These mushrooms can be dried in open air until they blacken and then stored in a tight fitting Mason Jar which should be kept, not in the fridge, but in the cupboard where they will last for quite a while. Reconstitute them in a light spray of water and they come back to life within hours. If the weather holds we will be searching for these fantastic fungi along with Grey Trichs and Fall Oysters.
