Puck’s Plenty Foraging – Staghorn Sumac

One of our favourite spices is za’atar, a Middle Eastern gem made of marjoram, oregano and sesame seeds. But the magic ingredient that sets this spice apart from all the others is Sumac, adding a lemony flavor that goes “wild” in any recipe you may wish to enhance. Sumac also makes a wonderful tea and amazing syrup (imagine Maple Syrup with a citrus hint). The beautiful trees grow right across Canada delivering their fruit to harvest throughout August and September. Along with Staghorn Sumac we will also be foraging for other Summer plants such as Wood Sorrel, Wild Watercress, Joe Pye and Pineapple Weed. Not to forget the mushrooms. Summer Oysters, Boletes, Crown Tipped Coral and more.
