Sochan, otherwise known as Cut Leaf Cone Flower, is one of our favourite herbs of early Spring. The young plants grow close to the ground in full forest sun not too far from a water source. The flavour of the leaves is amazing cooked or eaten raw. You can get more information here fromForager Chef. His Sochan/Watercress/Venison Ham recipe is off the charts delicious.
