May is no doubt the month for Morels and Fiddleheads but there are other delicious and nutritious wild edibles on the menu. Pheasant Back Mushrooms can be found on dead hardwoods. Marsh Marigolds (a replacement for Spinach) appear in wetlands while Nettles, one of the healthiest plants you can consume, share open fields alongside of Fiddleheads and Sochan. Mother Nature’s Horn of Plenty is only a 15 minute drive from our town of Stratford. A morning’s harvest fit for a . . . forager!
