One of our favourite parts of the nutritional Cattail is the shoot. Nestled between the green fan shaped leaves this white portion of the plant extends down to the root where it absorbs great amounts of moisture. The Shoot resembles hearts of palm and can be used in both salads and soups. We will be harvesting these tasty wild edibles along with Platterful and Pheasant Back Mushrooms, Day Lily Shoots, Stinging Nettles, Wild Leek Bulbs, Wild Ginger and more.
