The Oyster Mushroom

The arrival of the Oyster Mushroom signals the beginning of the Summer harvest of choice wild fungi. Rated by chefs worldwide as one of the prizes of the culinary world, the Oyster blesses us with its presence right through until mid Autumn. There's a sweetness about them that complements a wide variety of dishes and makes the hunt well worth your while.

Alongside the Oysters are Pheasant Backs, Platterful and Crowned Tipped Coral Mushrooms. Add to the mix Wild Watercress, Pineapple Weed, Nettles and Day Lily Shoots. It's the time of year that makes foraging hard to resist.
