Monforte Dairy is southwestern Ontario's premier artisanal cheese company, owned and operated by Stratford Chefs School instructor and chef Ruth Klahsen. Known for its range of extraordinary cheeses, Monforte is the supplier of choice to five-star restaurants, leading wineries and progressive food retailers throughout Ontario.
With its Renaissance 2010 capital campaign well underway and topping $200,000, funding drawn entirely from its customer base, Monforte now has a homesite, a piece of Perth County to call its own, at 49 Griffith Road in Stratford. We are open Wednesday to Sunday 10 am to 4 pm.
Here Monforte will relaunch its line of signature fresh cheeses in March, 2010, with aged cheeses to follow. The new dairy will work with four separate milk streams: sheep, goat, cow and water buffalo, for Monforte's upcoming water buffalo mozzarella.
The dairy's extensive grounds planning includes a community garden, an animal husbandry space, herb garden and ornamental ‘plaisance' garden. Monforte will have a retail space onsite, with the storefront boasting a viewing window into the dairy "make room"-the cheese processing space.
The new dairy will also have a series of ripening caves for aging Monforte's range of hard cheese and semi-soft aged cheeses. Complementary product lines will also be on offer at the retail shop, including regionally manufactured charcuterie, crackers, biscuits and flatbreads and other microproducer-created foods.
It's worth recalling that Monforte Renaissance 2010's goal is twofold: first, to underwrite the capital costs of this new dairy, now open to the public, micro-financed with Community Shared Agriculture (CSA) subscriptions and, second, to give its customers an opportunity to become a voice in the changing politics of food.
Monforte believes this new business model will lead to a growth in micro-production, making sustainable agriculture truly a way of life for farmers and shepherds, at the same time offering consumers with higher quality locally-produced products.
