Spring Foraging with Puck's Plenty
If you like rhubard you'll love Japanese Knotweed. The taste is somewhat milder and the shoots are so much smaller but all in all simply eating it is a marvelous way to control this invasive species. The shoots appear in early Spring and as long as they are tender they are fit for harvesting. As one source put it "They are tart, crunchy, and juicy; can be eaten raw or cooked; and can lean sweet or savory, depending on how they are prepared. They are more earthy and to me they taste like rain" . . . Wow!
